Shown here is sliced cucumber, grated carrot, avocado, shrimp, lettuce, basil, mint, and cilantro.
Next, quickly soak (1 minute, tops) the rice paper wraps in water, one at a time. Then, wrap the ingredients in like a burrito. Careful not to rip them!
Serve them with some dipping sauce, like some Thai Kitchen Sweet Red Chili Sauce or some peanut sauce..
The soup and fresh rolls were great together. I recommend serving these rolls and soup with some kind of Asian grilled steak entree.
