Huevos Rancheros

This meal is part of an annual tradition that we do at my house every year around Christmas for all of my friends…It becomes quite the event. Dad and I slave away doing eggs and tortillas for 20 people, and mom passes out margaritas and serves the food. All burners are on, the oven is on broil, and the kitchen is SUPER narrow. Chaos ensures. But, it’s way worth it.

The meal consists of two eggs sunny side up over corn tortillas topped with warmed tomato salsa, black beans, cheese, sour cream, and a few avocado slices. I like to cook the eggs in a pan with a little water and cover them so that they cook a little more (I don’t really like runny eggs). However, when you put the hot salsa on, it cooks the eggs even more.  You can make quick or longer versions of this recipe. For a quick recipe, you just use bought salsa and canned black beans. BUT. If you wanna impress everyone and have a party in your mouth, you must make this salsa..(The recipe is from http://www.cookusinterruptus.com)

Huevos Salsa

1 tablespoon extra-virgin olive oil
1/4 cup chopped onion
3 cloves garlic, minced
3 chile peppers: serrano, habanero, jalapeño
16-oz can chopped tomatoes
pinch sea salt
pinch chile powder

Heat oil in a medium-size skillet. Add onion, garlic, chiles, tomatoes, salt, and chile powder. Bring sauce to boil. Reduce heat and let simmer about 10 minutes.

If you wanna hit it out of the park, you include the black bean stew instead of canned beans..

Man-to-Man Chipotle Black Bean Stew

Serve this yummy stew over polenta or brown rice for a delicious, nutrient-rich meal. Mexican seasoning blends come in bulk or spice bottles at the grocery store.  They are usually a combination of cumin, oregano, peppers and other spices that offer a Southwestern flavor to dishes. Muir Glen makes excellent fire-roasted organic canned chopped tomatoes with green chiles which are excellent in this recipe.

1 tablespoon extra-virgin olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
2 teaspoons Mexican seasoning
1 cup dried black beans, soaked
1 dried chipotle chili
2 cups soup stock or water
1 – 2 teaspoons sea salt
1/2 cup frozen corn kernels
1/2 cup chopped tomatoes with green chiles
1/3 cup chopped cilantro

Making this recipe for lots of people can be hard work. There are eggs to cook, tortillas to warm, and cheese to melt. The best plan is to make the beans and salsa the night before. Then, you can wake up to this:
