One of my absolute favorite summer meals and items off an italian menu is Caprese Salad. It is fresh, light, and full of flavor. But, the key to a good caprese is fresh, seasonal ingredients. This isn’t the right salad to skip on quality. Even so, caprese is easy to make, healthy, and reasonably cheap to make! The only really tricky ingredients( in terms of money) are your fresh mozzarella and oil and vinegar. Good mozzarella is key, as well as high quality extra virgin olive oil and balsamic. Good oil and vinegar in my opinion are a must in every kitchen.
