Our version has boiled green beans, diced hard boiled egg, sliced tomatoes, a delicious white bean paste, and some awesome roasted potatoes.
10 small potatoes
salt and pepper
fresh chopped garlic
The reason I have no amounts listed is basically you should put as much of these ingredients on the potatoes as seems right. The only ingredient to be easy on is maybe the salt, but basically, go crazy! Especially with the lemon zest! Yum. So, yes, quarter the potatoes, cover them with the ingredients above, and stick them in the oven at 400 degrees for an hour.
White Bean Paste
Unfortunately, this paste was something my mom frankensteined, so to speak, in the kitchen, so a recipe is lacking, but here is a guide, more or less.
Cooked Cannellini beans
1 tablespoon of pesto
Some of the niçoise dressing (see below)
More lemon juice and white wine vinegar (another tablespoon altogether)
Mash all the ingredients up, and it’s so yummy!
1/3 cup lemon juice or more
2/3 cup olive oil
dash of white wine vinegar
teaspoon dijon mustard
teaspoon fresh garlic
And voila! You have a delicious summer meal.
